Butajiru / Tonjiru

‘Butajiru’ is a type of Miso Soup with pork in it. It is a very popular dish. ‘Butajiru’ usually contains Satoimo (Taro) and Konnyaku and Gobo (Burdock Root). Many Asian Grocery stores sell them but it might be difficult for you to find them. Even without them, this soup is quite delicious. The ingredients listed are suggestions. You can add whatever you have. Even Pork can be replaced by Beef or Chicken.

Prepare the Vegetables and Pork. Slice Pork thinly, and cut Vegetables and Tofu into small bite-size pieces.

Heat Dashi Stock (OR Water) and Vegetables in a pot, and cook on a medium heat until vegetables are soft. Then add thinly sliced Pork.

When Pork is cooked, add Miso and Tofu. Remove the soup from the heat just before it starts to boil.

Sprinkle finely chopped spring onions, and serve. *Shichimi (Japanese Chilli Powder) is also recommended to add extra flavour.
