Summer and blueberries yum. Here are 2 different versions. One non alcohol I learned thru an online cooking class and one alcohol version I found on the internet. I gave instructs for the alcohol version first followed by non. I add more club sofa (not following the recipe) then I do ginger ales because I don’t like a lot of sugar sometimes and it is still great. I talk about both because while I always have carbonated water I do not always have ginger ale and it is super easy to grab mint from my tiny herb garden.

Ingredients

4 servings or depending on version
  1. (Non - alchohol)
  2. 2 cups(Frozen BC blueberries
  3. 2handfuls) Fresh Mint Leaves
  4. 12Ice Cubes or use judgement
  5. 4 SlicesLime
  6. 2 CansGinger Ale (substitute alcohol for a bit of a kick)
  7. 2 CansCanada soda or carbonated water
  8. The version with kick (alcohol)
  9. 8blueberries (fresh or frozen and thawed), plus more for serving
  10. 2 tablespoons (1 ounce)fresh squeezed lime juice
  11. 2 teaspoonssugar
  12. 8fresh mint leaves
  13. 1/4 cup (2 ounces)white rum
  14. Ice
  15. 2 tablespoons (1 ounce)club soda
  16. Lime slice for serving
  17. To make enough for four people follow these amounts:
  18. 1/2 cupblueberries,
  19. 1/2 cupfreshly squeezed lime juice,
  20. 3 tablespoonssugar
  21. 32fresh mint leaves
  22. 1 cupwhite rum,
  23. 4 cupsice,
  24. 1/2 cupclub soda,
  25. 4lime slices for garnish

Cooking Instructions

    (Alcohol version) Add blueberries, lime juice, sugar and eight mint leaves to a cocktail shaker. Use the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and sugar. This releases oils from the mint, breaks up the blueberries and helps the sugar dissolve into the lime juice.

    Add rum, stir well, and then pour into a glass filled with ice, leaving about an inch of room then top with club soda. Serve with extra blueberries, mint leaves, and a lime slice.

    (Non alcohol version) Add blueberries, lime juice, and mint leaves to a water pitcher. Use the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and blueberries.

    Add soda and ginger-ale (note I sometimes add more club sofa and less ginger ale as I do not like things too sugary). stir well, and then pour into a glass filled with ice, leaving room and then serve with extra blueberries, mint leaves, and a lime slice.
