Steps

Wash fresh brinjals and just cut the inside of veg (don't make it slices) then put it in water

Fry peanut, coriander seeds, black seasame seeds seperately and then fry cinnamon sticks, glove, yelachi with Fenugreek once splutter remove from heat

Fry red chillies without oil and also coconut

Make a paste into all the fried ingredients with ginger garlic...

Now, we have to stuff this paste into sliced Brinjals... Rest in 15min....

Pour sesame oil in kadai add Mustard seeds, Jeera, curry leaves, asofoiedita, onion, Tomato one by one... Then add stuffed Brinjal with this... Slightly satue... then cover it for next 5mins... Stir in between

Then add the masala paste with Brinjal and some water also... Adjust salt as required and leave it to boil at least next 5min...

Now tasty aromatic traditional South Indian Chettinad brinjal (kathirikai) masala ready

If you want add 1/4cup tamarind sauce in this masala (you can use small onion sized tamarind to extract sauce)

Serve with Rice and Pappad tasty
