I read somewhere that Indians are not fond of crusty bread and was wondering why?? This question led me to try different types of bread. This is my second-best favorite. I just love this bread for crusty outside and soft inside. Also, the key ingredient is patience.

I read somewhere that Indians are not fond of crusty bread and was wondering why?? This question led me to try different types of bread. This is my second-best favorite. I just love this bread for crusty outside and soft inside. Also, the key ingredient is patience.

First, prepare poolish - Take All-purpose flour, instant yeast and mix it well with water. Cover it and keep it for 15 hours.

After that to prepare dough to take All-purpose flour. Add salt and water. As the dough is loose it will be good if you are using a standing mixer. I used a food processor. Knead it for some 7-8 minutes. Grease the large vessel and shift the dough in it. Cover it. After 45 minutes turn the dough upside down with the help of a spatula. Again cover it for 45 minutes. Follow this step for 3 more times.

Take the dough to the working table. With help of a scrapper, divide the dough into equal two parts. Sprinkle flour. Shift it to the baking tray. Meanwhile, preheat the oven to 200° degrees. Bake it at 180° degrees for 45 minutes. Bake for another 5 minutes at 200° to get the brown side on the top. Serve with soup or dip. You can enjoy it as it is.
