Stuffed Spaghetti Squash
The spaghetti squash is stuffed with chicken, broccoli, bacon, spaghetti squash noodles, and lots of homemade Alfredo sauce. I mixed everything together, spooned some back into the hollowed out squash, then topped it with freshly shredded parmesan cheese. I stuck it in the air fryer for about 5 minutes to melt and crisp the cheese on top.
When I roast the squash, I put them facedown on the pan that I used to bake the bacon. They absorbed all of that delicious, bacon flavor. Pretty genius, right?
Note: I find that the sauce has enough saltiness without adding any extra, so I wouldn't add any salt until your sauce is finished cooking and you taste test it first.

In a medium saucepan melt the butter over medium heat.

Add fresh minced garlic and cook for about 1 minute.

Add the cream cheese and whisk until semi-smooth (it will still look grainy / curdled).

Whisk in the heavy cream or half & half.

Season with garlic powder, Italian seasoning, and red pepper.

Bring to a simmer and whisk frequently until the sauce thickens, about 15 minutes.

Whisk in the parmesan cheese until smooth.
