Schezwan chutney is made from dried red chilies and is very spicy.
Steps

First, soak the dried red chilies in hot water for 30 minutes or until they become soft.

Drain the water and blend the chilies with just enough water to make a smooth paste.

Heat oil in a pan and sauté the garlic and ginger until the raw smell disappears.

Add the prepared red chili paste and cook, stirring, until the paste is well cooked.

You can add water at this stage and cover the pan while cooking if needed.

Cook until you see oil floating on top. Then remove the lid and add black pepper, vinegar, and soy sauce. Add salt and sugar as well, and mix well.

Cook until the sugar dissolves and the chutney thickens and most of the liquid evaporates.

Your spicy Schezwan chutney is ready.
