Persian Rice with Potato Tahdig is an Iranian dish with perfectly steamed saffron rice and crispy fried potatoes .
Steps

First wash the rice and soaked in water for half an hour. take 4 cups water in a wok add 3 tbsp salt.bring it a boil then add soaked rice and cook for 6-7 minutes.then strain it and wash with cold water.keep aside.

Take saffron crush it with finger and brewed into 1/4 cup hot water. Meanwhile Peel the potato and cut into 1 inch thick slices.take half par boiled rice in a bowl and add 2tbsp saffron water and mix it.

Take a non-stick wok add butter then add rest of saffron water and little sprinkle of salt and mix well Add the potatoes, sprinkle each with a little salt and then add saffron rice.

Now add rest of rice and firm it well with spatula. Cover and cooked on high for 10 minutes. Lower the temperature, cook about 25-30 minutes.turn off the flame.let it cool.then flip it in a plate very carefully.
