Coconut Chicken

I cooked this for myself after a very long but successful week.

Steps

Wash Chicken thighs

In a pan, put the chicken then add in the Garlic and Ginger paste, Cinnamon powder, Cardamom powder, Curry powder, Black pepper, Salt and a teaspoon of cooking oil. Mix in well and cover for 30 minutes to an hour.

Boil the Chicken in it's own juices on medium heat and set aside once cooked and all the juices are completely dried out.

In a pan, fry the Onions for a few minutes then add in the assorted Capsicum. Cook

Next add in the tomatoes and cover to allow to cook for a few minutes.

Once tomatoes are cooked, add in the Coconut Milk and gently simmer on medium heat for a few minutes.

Add in the Chicken, simmer for 5 to 10 minutes on low heat.

Finish with Dhania and serve.
