Cooking Instructions

Melt a tbsp of butter in a nonstick pan on medium heat and sauté a handful of chopped red and green bell peppers for 2-3 minutes until they’re sweating but still have a crunch.

To the same pan, pour in just egg mixture. (I pout what looks like 3 eggs but you can adjust to your liking)

Stir your just egg mixture into the bell peppers and as you scramble the “eggs”, add some pepper to your liking. When done, turn heat off and set aside.

If you don’t have left over white sauce, make a new batch. Load vegan mayo, plain vegan Greek yogurt yogurt, fresh dill, salt, pepper, garlic powder, vinegar, lime juice, and sugar into a blender or food processor and blend for about 30 seconds.

Toast your tortilla. The brand I have pictured below can be found at Walmart and omg, it’s the BEST. If you can find them in your area, get them!!!

Fill your cooked tortilla with your scrambled eggs. Fold like a burrito and slice diagonally down the middle. Top with Vegan feta cheese and a drizzle of white sauce. (You can all fill your wrap with the white sauce if you prefer)

I had some joshinko left over and a member of the COOKPAD taught me how to use it up, from what she saw it on an NHK TV show. I adopted the stew recipe and changed it into a white sauce recipe. It does not contain butter, so it is healthy and is easy on your stomach. I use this recipe all the time for my family.Make sure the joshinko is dissolved in the milk for a while before use. It should be about 10 minutes. This is very important! You can use it right after dissolving it, but the smell of the flour remains and the texture is not too good, so let it settle. Adjust the ratio of the milk and joshinko to your preference. There are two different kinds of joshinko; one is 100% non-glutinous rice flour and the other one contains some regular rice flour. #SandwichedMy mum recently bought alot of tortillas to keep in the refrigerator for anytime we wanted to wrap a quick snack or dinner, I experimented alot of different fillings and this recipe yields you some amazing tasting veggie wraps because you can definitely leave out the eggs. Of course, feel free to leave out or add any other vegetables just be careful with the liquid content of the veggie you are using as too much liquid will make your wrap soggy.Ps: You can double or even triple this recipe.Also, this might seem like alot of work but I just type alot to give you the best understanding possible. I used healthy tofu in place of chicken for "oyakodon" (chicken & egg rice bowl).Since tofu has a lot of moisture, if the taste becomes diluted, add soy sauce for flavor. Don't cook the egg too much, so that it stays fluffy. It becomes even more delicious if you sprinkle with shichimi spice at the end.
