Day After Thanksgiving Turkey Salad with Apples, Dried Cranberries & Other Stuff

Turkeys are such big beasts. There's always enough left to make at least 2 or 3 different things with the leftovers on top of the turkey set aside for eating plain.

Whipped this up today to use up some of the breast meat. It'll be yummy in a sandwich, with salad greens, on crackers, mixed with cooked pasta with a little extra mayo, or on some of that celery you've got left over from making stuffing.

A little curry powder (up to 1 teaspoon) would also be a great addition, but I'm not feeling it today.

Ingredients

  • 4 cupsloosely shredded or chopped roast turkey
  • 1/4-1/3 cupminced onion
  • 1/2 cupdiced fresh apple
  • 1/4-1/3 cupdried cranberries (raisins, dried cherries, and chopped dried apricots would also work great)
  • 3 Tablespoonsto 1/4 cup chopped fresh herbs (whatever you like and have on hand words) or use 1 to 2 teaspoons dried
  • 1/4-1/3 cupchopped pickled peppers (if you only have regular cucumber pickles, that's fine, too)
  • 3/4-1 cupmayonnaise depending on creamy you like it
  • 1 Tablespoonmustard
  • 1 Tablespoonpickle juice (from whichever pickles you ended up using)
  • 1/2 teaspoonblack pepper
  • salt to taste (you probably won't need much between the seasoning on your turkey and the salt in the mayo, mustard, pickles)

Steps

  1. 1

    Throw everything into a large mixing bowl.
