Fried Fish with Sauce

This is a very tasty and easy to make meal. It is also very versatile. You can take it as breakfast with flavoured or spiced tea, as a side dish during lunch, as an evening snack, or to satisfy those night cravings with some fresh fruit juice. I used dry marinade for this recipe, but you can substitute with wet or liquid marinade, but dry marinade reduces splattering of oil when frying the fish.
Fried Fish with Sauce

Cooking Instructions

Wash fresh fish properly with vinegar.

Make few cuts on big fishes. Allow to drain in a colander.

Prepare dry marinade. Combine seasonings of choice with spices of choice (I used ginger powder, garlic powder, curry, powdered pepper [yaji] and branded fish spice).

Transfer drained fish to a tray. Sprinkle (liberally) the combination of spices and seasoning (in step 3).

Allow to marinate and further dry for 20 to 30 minutes. Pour oil in a big frying pan and put on heat source. Add some cuts of onion and ginger. Allow oil to heat up. Remove fried onion and ginger.

Reduce heat to medium and transfer fish to oil. Do not overcrowd oil. Add more cuts of onion and ginger. This helps to dispel the smell of fish in the kitchen and enhance the flavour of the fried fish.

Turn after the bottom has browned. Transfer to a colander to drain after fish is fried.

For the sauce, put some oil in a pan. Add in all cut vegetables (spring onion, onions, greenbell pepper, scotch bonnet and red bell pepper). Also add the seasoning, spices and soy sauce. Stir fry on low heat. Turn off heat after its cooked.

Serve fried fish with the sauce. You can garnish as desired.
