Round Sweet Potato & Jam Sandwiches

I think I want to try making more healthy, easy, and tasty snacks that use delicious Hokkaido potatoes.

For Step 1, the easiest way to cook the potatoes is with a 600 W microwave for 3.5 minutes. Because the sweet potato that I used is probably different than what you are using, the moisture content will vary. There is a chance that the batter will become very soft, and in Step 3 the dough may be sticky and difficult to remove from the pan, so I would recommend adding 1 tablespoon of cake flour. Ingredients

4 servings
  • 1karge potato, about 150 grams Potatoes
  • 50 gramsCake flour
  • 1/2 tspBaking powder
  • 30 gramsGranulated sugar
  • 50 mlMilk
  • 4 tspJam (any kind)

Steps

    Cook the potatoes in the microwave and mash while hot. Preheat your oven to 170℃ (340℉).

    Add the sugar and then the milk, making sure to mix well between each addition.

    Combine the flour and the baking powder together, and then while stirring gently, add to Step 2.

    Next, make the dough into 4 cm wide round balls and gently flatten. Arrange on a cookie tray or baking sheet placed on your countertop.

    Next, bake at 170℃ (340℉) for about 13-15 minutes.

    When they are done, cool on a rack.

    Once they have cooled off, slice in half, spread a teaspoon of your favorite jam one by one to make sandwiches.

    From the front going clockwise: blueberry jam, marmalade, strawberry jam and mango jam.
