Round Sweet Potato & Jam Sandwiches

I think I want to try making more healthy, easy, and tasty snacks that use delicious Hokkaido potatoes.
For Step 1, the easiest way to cook the potatoes is with a 600 W microwave for 3.5 minutes. Because the sweet potato that I used is probably different than what you are using, the moisture content will vary. There is a chance that the batter will become very soft, and in Step 3 the dough may be sticky and difficult to remove from the pan, so I would recommend adding 1 tablespoon of cake flour.
