Ingredients

  • 1 cupfinely chopped kale add
  • 1/2 cupcarrot match sticks
  • 1/3 cupdry roasted peanuts
  • 1Yellow o r Orange pepper finely chopped
  • 2pinch’s fresh cilantro
  • Optional water chestnuts
  • Dressing - make ahead
  • 1/2 cupcreamy peanut butter
  • 2 tbspbrown sugar
  • 1/4 cupchicken stock
  • 1/4 cuplow sod soy sauce
  • 1 cloveminiver garlic
  • 2 tbspfresh lemon juice
  • 1 tbspginger
  • 2pinch’s or 1/8 tbsp cayenne pepper
  • 1/4 cupwater
  • Mix in a sauce pan bring to a liquid sauce, it will be thick. Don’t over cook. Split up half sauce for your chicken and 1/4 for dressing.add rice vinegar to the 1.4 cup to thin and make a dressing
  • Add cilantro to thinned dressing. 2 pinches / squeeze of fresh lime
  • Spoondressing over mixed salad in each plate. Do not put on entire salad it will make it soggy, add additional peanuts for crunch !
  • Peanut chicken
  • 12-15chicken tenderloins, skinless cleaned
  • Salt and Pepper- take peanut sauce above that you set aside and spread on chicken. Grill or sauté on med 4-5 minutes per side
  • Yogurt Dill Sauce for Peanut Chicken
  • 1 cupsoy yogurt
  • 3 tbspfresh dill chopped
  • 2 tbspfresh lemon juice
  • 1 clovegarlic minced
  • Blend - refrigerate and serve cold w chicken for dipping
