Ingredients

  1. 1 cupfinely chopped kale add
  2. 1/2 cupcarrot match sticks
  3. 1/3 cupdry roasted peanuts
  4. 1Yellow o r Orange pepper finely chopped
  5. 2pinch’s fresh cilantro
  6. Optional water chestnuts
  7. Dressing - make ahead
  8. 1/2 cupcreamy peanut butter
  9. 2 tbspbrown sugar
  10. 1/4 cupchicken stock
  11. 1/4 cuplow sod soy sauce
  12. 1 cloveminiver garlic
  13. 2 tbspfresh lemon juice
  14. 1 tbspginger
  15. 2pinch’s or 1/8 tbsp cayenne pepper
  16. 1/4 cupwater
  17. Mix in a sauce pan bring to a liquid sauce, it will be thick. Don’t over cook. Split up half sauce for your chicken and 1/4 for dressing.add rice vinegar to the 1.4 cup to thin and make a dressing
  18. Add cilantro to thinned dressing. 2 pinches / squeeze of fresh lime
  19. Spoondressing over mixed salad in each plate. Do not put on entire salad it will make it soggy, add additional peanuts for crunch !
  20. Peanut chicken
  21. 12-15chicken tenderloins, skinless cleaned
  22. Salt and Pepper- take peanut sauce above that you set aside and spread on chicken. Grill or sauté on med 4-5 minutes per side
  23. Yogurt Dill Sauce for Peanut Chicken
  24. 1 cupsoy yogurt
  25. 3 tbspfresh dill chopped
  26. 2 tbspfresh lemon juice
  27. 1 clovegarlic minced
  28. Blend - refrigerate and serve cold w chicken for dipping
