Such a pleasure, our Meyer Improved Lemon tree! We use the zest of twenty of the largest ripest fresh lemons to make this Limoncello liqueur starting in February. After pressing the juice out, the lemonpeels are scraped and immersed in vodka for a few months. The lemon juice is poured in quart mason jars or plastic bottles and frozen. By July, the lemon peel extract is ready, we make limoncello as dessert for hot summer evenings.

Ingredients

Peel extract 4 months, 1 hour to make liqueur
One gallon (4 liters), 16 friends
  • 20fresh Large Meyer Improved Lemons, juice and peels
  • 4 cups(liter) cane sugar
  • 8 cups (2 liters)water
  • 1/2 gallon80 proof (40% alcohol) vodka
  • Tools
  • Hydrometer if you like to measure the alcohol percentage
  • 4 quartmason jars with lids
  • Pintmason jar
  • Microplaner

  • Home grown lemons are $20 at the farmers market, cane sugar, $1.60, vodka $6, $1.90 per quart jar

Steps

Peel extract 4 months, 1 hour to make liqueur

    Make four cups of lemon peel extract. Scrub, rinse, then soak fresh lemons in bucket of cold water overnight. Dry. Microplane the skin to obtain the zest, or scrape peels free of pith and cut in strips. Put in quart mason jar container. Top with vodka. Close airtight, put in dark closet for four months.

    Preserve four pints of lemon juice. Press out the juice from the lemons, filter into plastic jars or mason jars, freeze.

    Boil 1 cup of cane sugar in cup of water till dissolved, stir. Cool, put in quart jar. Filter the zest extract, add a cup of extract to quart jar. Add a cup of lemon juice. Top with cup of vodka. IMPORTANT. Lemon zest has different intensity from harvest to harvest. Taste your first jar, adjust your dissolved sugar quantity for the other three jars to your taste. Enjoy.
