When I was a child, we used to travel to the town where my grandfather's cousin lived. Every time we arrived, they welcomed us with delicious food. This is one of many recipes I remember fondly.

In a mixing bowl, combine the masa with lard, baking powder, and salt. Knead until the dough no longer sticks to your hands. Start forming the tlacoyos by adding a small amount of refried beans to each. Place them on a preheated skillet or griddle and flip only three times (this is important). Set aside.

For the nopal salad: Cut the nopales into small cubes. Cook them with a little water for about 15 minutes to remove the sliminess.

Drain the nopales in a colander and rinse under cold running water to stop the cooking and remove any remaining slime. Once rinsed, place them in a bowl. Add thinly sliced onion, diced tomato, chopped cilantro, sliced radishes, crumbled panela cheese, olive oil, oregano, and salt to taste. Mix well and set aside.

When ready to serve for breakfast or lunch, heat a skillet with a little lard and lightly fry the tlacoyos. Top with the nopal salad and serve with your favorite salsa.
