Moras Bhajiya / Pakoda

Moras bhaji is a salty succulent which is available during early monsoon. In Gujarat it is available specially during Gauri vrat. During this vrat period, different items are prepared using this delicious bhaji. Salt is not allowed during fasting and moras leaves are quite salty so little girls actually enjoy it a lot.
My mother used to make tasty pakora using this bhaji when I used to do Gauri vrat in my childhood. These pakodas are made only using wheat flour, curd and black pepper powder along with moras bhaji. You can not add salt or any other thing if you are observing the fast but if you are not then green chillies and little bit of salt tastes great in this pakoda. These leaves are salty itself so usually you do not have to add a lot of salt. Moras pakoda makes a great snack served with plain yoghurt.

First of all clean bhaji and collect leaves. Now wash it very carefully until all the dirt is gone. Chop it very finely in a chopper or on a chopping board.

In a big bowl add wheat flour, bhaji, black pepper and curd. If you are not fasting for gauri vrat, then you can even add little bit of salt and green chilli paste. Now start adding water and mix it very well to make a medium consistency batter out of it. Cover and keep it for 15 minutes.

Add hot oil to the batter and mix it. Heat oil in a pan and with the help with your hand take little portions of batter and add it to the hot oil. Fry pakoda on medium to high heat until crisp and golden brown in colour. Prepare all pakoda in the same way.

Serve hot pakoda with yoghurt.
