Kheer Puri

Kheer and Puri is a very traditional Indian dish loved by all and can be cooked at any festival and occasion. My Mom used to prepare it on our (me and my siblings) Birthday. To continuing the tradition I also release "Kheer Puri" on my kids Birthday and they also enjoyed it as much as me .😊

For making Kheer,
Firstly wash and soak rice for 20 minutes. This helps to cook the rice quickly. Drain and set aside. - 2
Pour milk into a heavy-bottomed pot and bring it to boil on medium flame. When it comes to a boil add the drained rice.
Keep string often to prevent burning. keep the flame on low. Add saffron. Cook until rice is soft and slightly mushy. you can mash it with your finger and check. - 3
Add nuts, cardamom powder, and sugar. Mix all well. Scrap the sides and stir often.
Cook until the kheer thickens on low flame. Once it's done let it cool completely. Transfer kheer in a serving bowl and garnish it with chopped nuts and rose petals. - 4
For making Puri,
In a big bowl add, wheat flour, semolina, salt, and carom seeds mix all together. Now add ghee, crumble and mix well.
Further, add milk, knead the dough tight adding water as required. - 5
Now roll half the dough to form a log. Cut into pieces and roll them into small balls. Place the balls into a small bowl and 1 tsp oil. grease the ball to prevent it from drying.

Take a ball and roll using a rolling pin. Drop the rolled dough into the hot oil. Press softly until the puri puffs up and splash oil to puff up fully. Flip over and fry until it turns golden brown. Similarly, make all Puri. It is ready to enjoy with Kheer.

Serve, hot Puri with room temperature or chilled Kheer.
