Cooking Instructions
- 1
Microwave the kabocha for 4-5 minutes with the skins still attached. Remove the skins if you like.
- 2
Cut the cheese into 1 cm squares. Smash up the kabocha once it has softened, and form into circular shapes, about 2 cm in diameter.
- 3
Add the cheese to the kabocha, and cover with panko while it is still warm. You can do up to this step the day before.
- 4
Add about 1 cm of oil to the bottom of a frying pan, and fry the croquettes. Once they have changed color, they're done.
- 5
If using an oven, it takes about 7 minutes to cook.
- 6
Shown above is toasted croquettes.
- 7
If you are baking them in the oven, then the panko will look just like toast.
- 8
When you coat in Step 7, they turn out brown instead of white.

I got a hint from a recipe by user Kalchofii. Mixing kabocha and potato together is delicious and has a mild sweetness, so I thought it must make delicious croquettes. My husband who usually doesn't like potato or kabocha loved these. It is a little bit of work, but it tastes better if you cook the kabocha squash and potatoes after boiling them to extract the water. You will taste more of the kabocha with 2 eggs, but it'll take an eggy flavor with 3. I seasoned it with consomme bouillon like my other kabocha squash salad recipes. Easy Kabocha Squash Croquettes Easy Kabocha Squash Croquettes
My mother loves kabocha squash, so I made these croquettes for her. She asked me to make just plain croquettes without other ingredients and I made these simple croquettes. It was easy to make! (I sent my mother frozen ones.)-Before microwaving the kabocha squash, wet 2 pieces of kitchen paper and squeeze out the excess water. Line the bottom of the heat-proof dish with one piece of kitchen paper and cover the kabocha with another. The resultant kabocha squash will turn out better. Don't forget the cling film to cover on top.-Kabocha skins have a lot of nutritions. Pare off the skin roughly so that some of the skins can stay on.-Make them in batches and freeze.
