Today I made chicken korma, and it turned out very tasty.

First, wash the chicken and marinate it. Add 2 tablespoons yogurt, ginger paste, garlic paste, 1/2 tablespoon salt, 1 tablespoon ground black pepper, and 1 tablespoon chicken masala to the chicken. Cover and let it marinate for 1 hour.

Boil 2 onions and the cashews, then blend them together with a little water. Also blend 2 tomatoes, 2 green chilies, ginger, and garlic together.

In a pan, heat 2 tablespoons oil and 2 tablespoons butter. Add the marinated chicken and cook on high heat. Add 1 tablespoon red chili powder and 1/2 tablespoon turmeric. Sauté until the chicken is dry and the oil separates, then turn off the heat.

In another pan, heat 4 tablespoons oil and 2 tablespoons butter. Add the blended onion and cashew mixture, and sauté for 5 minutes. Add the cooked chicken and sauté on low heat for another 5 minutes. When the oil starts to separate, add 1/4 tablespoon salt, 1/2 tablespoon red chili powder, and 1 tablespoon dried fenugreek leaves. Add water to reach your desired gravy consistency.

Simmer for 4 minutes, then top with chopped cilantro and 2 tablespoons butter. Your delicious chicken korma is ready to serve with rice, roti, naan, or paratha.
