Ingredients

  1. For the Marinade
  2. (1/2) Cup Olive Oil
  3. (1/4) Cup Fresh Lemon Juice
  4. (2) Tsp. Dried Oregano
  5. (2) Tsp. Dried Rosemary
  6. (6) Garlic Cloves (Minced)
  7. (1/4) Tsp. Black Pepper (can use white pepper)
  8. (2) Tsp. Pink Sea Salt
  9. Lamb Chops
  10. 4-8Bone in lamb loin chops. 2" thick are best. Costco has them in packs of 8

Cooking Instructions

    Mix all of the ingredients together in a mixing bowl. Whisk together.

    Arrange lamb chops in a glass baking dish that just fits all the lamb you are marinating. Pour the marinade all over the lamb, rubbing it into the meat.

    Cover with foil and marinate for an hour minimum. For a deeper flavor, marinate overnight in the refrigerator, turning the chops from time to time (before cooking, let lamb chops sit at room temp 30 minutes).

    Heat the Kamado Joe/Green Egg to 500 degrees. Cook on upper level 4-5 minutes each side. Check center with thermometer. 145 degrees is medium rare. Get a nice char on them right before pulling them off.

    Let rest for 5 minutes before serving.

    Serve as is or add tzatziki sauce on the side.
