Cooking Instructions
- 1
Whisk together ingredients for marinade. Add chicken to marinade and turn until all the chicken is completely coated in the sauce. Marinate in the fridge for at least 30 minutes, up to overnight.
- 2
When ready to cook the chicken, preheat oven to 190c. Line a baking sheet with foil for easy cleanup
- 3
Arrange chicken on baking sheet, discard excess marinade. Bake chicken for a total of 25 minutes.
- 4
While chicken is baking, whisk together ingredients for glaze in a small sauce pan over medium heat. Cook, whisking occasionally, for 5 minutes, or until sauce has thickened. Do not allow sauce to boil.
- 5
In the last 5 minutes of cooking chicken, brush with the glaze. After chicken is done, remove from oven and brush with another coat of the glaze before serving.

Pork Rind Baked Chicken Thighs Pork Rind Baked Chicken Thighs
Still experimenting with lower fat and lower carb recipes. Protein is king for myself now so I add more in where I can, hence the greek yogurt. I have a version of this recipe using mayo. The greek yogurt gives the same tender meat result without any added fat and a touch of added protein. Flavor always has to reign supreme. These thighs were crispy, fork tender and just plain delicious. A change in your eating lifestyle doesn't mean boring! Taylor Topp Comacho
