This is a great way to use up excess courgettes from the garden. The perfect side to a summer BBQ!
Cooking Instructions

Using a vegetable peeler cut your courgettes into long ribbons and place in a bowl.

Add the olive oil, garlic, salt and pepper and dress the courgette as if it were a salad.
- 3
Fold the courgette slices back and forth into a zig-zag and thread the folded slices onto a skewer. It's good to pack them quite tightly so it stays together when it is cooking.

Place on a hot BBQ and turn regularly until it is cooked through and has some slightly burnt edges.

Serve as a side dish with the rest of your BBQ.
