Ingredients

4 people
  • 500 gmarinated Hake Fillet
  • 3tomatoes, sliced
  • 1zucchini, chopped into quarters
  • 3spring onions, chopped
  • 1avocado, chopped
  • 1lemon, juiced
  • 4 sprigsfresh thyme
  • 200 gpearl couscous
  • 340 gchickpeas, rinsed
  • 1/2 tsppaprika powder

Steps

  1. 1

    Cook the couscous according to the package directions, about 9 minutes.

  2. 2

    Meanwhile, heat 1 tablespoon of olive oil in a pan and sauté the zucchini for 5 minutes. Season with salt and pepper.

  3. 3

    Bake the fish in the oven for 15 minutes at 180°C.

  4. 4

    In a mixing bowl, sprinkle the avocado with half of the lemon juice.

  5. 5

    Add 1 tbsp olive oil, the chickpeas, spring onions, cooked zucchini and couscous.
    Add the rest of the lemon juice.
    Season with the thyme, paprika, salt and pepper. Mix well.

  6. 6

    Divide the tomatoes between the plates, spoon the pearl couscous salad on top and serve with the fish. Enjoy!!
