My mom used to make Bitter Gourd this way for a change !
Sometimes with cabbage, sometimes with radish, sometimes with boiled potatoes, in boiled potato you can add other veggies too along with it like cucumber, carrot and peas.
She loved making various kinds of Achhaar Chutney, Papad etc. which would go great as a side dish with simple Rice, Roti, Dal etc.

Cut the Bittergourd into small pieces lengthwise. Add little turmeric and salt and let it rest for half an hour. Discard the water of the Bittergourd. Boil some water, add the Bittergourd into it and boil for about 5-10 minutes, till Bittergourd gets cooked, check by pressing. Drain the water and wash it in cold running water. Keep it in the colander for the excess water to drain off. Gently Pat dry if needed. Add it in a bowl and add all other ingredients to it.

Heat mustard oil in a pan, when it starts smoking add in the fenugreek seeds/ Methi seeds and once it starts blackening, pour it on the bitter gourd bowl. Wait for the oil to cool a bit and mix it. Adjust salt and lemon juice as per taste. Keep for 1-2 hours for the flavours to infuse and then serve. This keep well for 1-2 days in the fridge.
