Sweet Corn Chicken Soup

A classic Soup that almost everyone knows and also has a first hand experience in making it. But when it comes to a healthy bowl of Soup, no one can resist this on any day and we tend to make it again and again. And thus I have made it as well.
A super healthy one that's a favourite of many. It's a popular starter. I had always tried this for Dinner and especially on Winter nights and also rainy evenings. And not only is it warm and soothing for the body, it's a healthy one with the goodness of White meat. The ingredients are also simple and Sweet Corn renders it an excellent flavour and texture. Chilli sauce can be skipped if desired. However it gives a little punch to the Soup. I have served it piping hot with Burger Buns toasted in a little Butter. That's it. A perfect and a complete comfort food for Winters.

In a cooking pot, melt Butter on a low heat. Saute the Garlic mince for a minute before adding in the Veggies. Also add Chilli Sauce. Saute them all for about 3-4 minutes.

Add Chicken now and saute again for about 5-6 minutes. And add enough water now. Simmer on a low to medium high heat and add more water if required. Keep stirring in between.

After 25 minutes of simmering, remove the Chicken and shred it. Discard the bones. Do not cook much because the Chicken will be too mushy and soft. The soup should retain the crunch of the Veggies as well and the Chicken should be succulent yet firm. Add it back to the simmering soup. Add Blackpepper and Salt now along with the Cornflour slurry.

Adjust salt and pepper according to taste. Simmer for 5 more minutes until a desired thickness is reached. Whisk an Egg in a bowl and add it to the Soup stirring and mixing all the while for beautiful white streaks of Egg Whites and Yolk on top. Serve hot garnished with chopped Coriander and Spring Onions. Yum!
