I love raisins, so I came up with a cookie full of them.

Be sure to start preheating the oven from the start! Once you add the baking soda to the vinegar, it will begin to react, so when you mix together the liquid with the dry ingredients, it's important to get it into the oven as quickly as possible.
You can swap the ground sesame seeds with almond flour if desired. Just almond flour is delicious enough, but using ground sesame as well gives it a deeper flavor.
If you don't have many raisins (90 g), soak in apple juice rather than water to increase the sweetness. Recipe by Meifan

Ingredients

30 servings
  1. 100 grams☆Whole wheat cake four (or cake flour)
  2. 30 grams☆Almond flour
  3. 20 grams☆Ground white sesame seeds
  4. 1/4 tsp☆Bicarbonate of soda (baking soda)
  5. 4 pinch☆Salt
  6. 50 ml100% apple juice (or water)
  7. 1/2 tspApple vinegar (or lemon juice or regular vinegar)
  8. 120 gramsCalifornia raisins

Cooking Instructions

    Put the raisins in boiling water, then quickly drain. Set on paper towels to drain. Preheat the oven to 180℃.

    Put the ☆ dry ingredients into a bowl and mix with a whisk.

    Combine the apple vinegar and apple juice.

    Add the liquid from Step 3 into the bowl from Step 2 and combine with a rubber spatula.

    Fold in the raisins.

    Bring it all together, then place on top of kitchen parchment paper. Use a rolling pin to roll out to about 5 mm thickness and so that it is spread out to about 2/3 the size of your baking pan. Bake in an oven preheated to 180℃ for 25 minutes. (The raisins will burn easily, so after the first 15 minutes, cover with aluminum foil.)

    Once baked, cut with a knife into 2 x 7 cm sticks for easy eating.
