I have a lemon tree and this year it’s loaded with some beauties!! I’ve been making these for years and they never disappoint. Made with lemons straight off the tree, they’re super tangy, which I love!! The shortbread crust just melts in your mouth, literally. It takes no time to throw this one together. #mycookbook

Ingredients

  1. 3/4 cupfresh squeezed lemon juice, bottled is fine if you don’t have that
  2. 2 cupsgranulated sugar
  3. 4eggs beaten
  4. 1/4 cupflour
  5. 1/2 tspbaking powder
  6. crust:
  7. 2 cupsflour
  8. 1 cuppowdered sugar
  9. 2 sticksbutter or margarine, diced

Cooking Instructions

    Preheat oven to 350. Spray well your 13x9 baking dish. In a bowl, beat together first 5 ingredients and set aside. In another bowl, combine the crust ingredients and blend well with a pastry blender or fork until crumbly. Put the crumble mixture in you dish and press it down evenly. Bake for about 15-20 minutes and remove.

    Stir your filling one more time and pour over crust. Bake 20-25 minutes more or until set.

    Let cool then sprinkle with more powdered sugar

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
