I had never made these before, but I was really craving them, so I decided to try making them for the first time and they turned out delicious.

I had never made these before, but I was really craving them, so I decided to try making them for the first time and they turned out delicious.

Start by making the dough, just like for gorditas or tortillas. Combine the 2 cups of Maseca, salt, and gradually add water until you get the right consistency. (I explain this better in my gorditas recipe.)

Let the dough rest while you prepare the pork cracklings. I keep it simple: since I already have the salsa ready, I heat it up, then add the bagged pork cracklings.

Chop the tomatoes, onion, and lettuce. You can also add shredded cheese if you like.

To shape the sopes, if you don't have a tortilla press, use a Ziploc bag cut in half and a bottle or glass to flatten the dough balls. Press them and place on a hot griddle (comal) with a little oil.

Flip them when cooked on one side and let them cook through. Once done, remove, pinch the edges to form a rim, and cook again briefly to finish.

Once ready, top with the pork cracklings, lettuce, tomato, onion, crema, and cheese if you like. Enjoy!
