Ingredients

  1. 2 lbsmutton aka goat-meat(curry cut)
  2. 1/2 cupyoghurt
  3. 3onions (sliced)
  4. 3-4green chilis (slit)
  5. 3 tbspginger-garlic paste
  6. Spices:
  7. 3-4red chilis
  8. 3cinnamon sticks
  9. 7-8white cardamom
  10. 5-6cloves
  11. 2bay-leaf
  12. 3-4 tbspshahi garam masala powder
  13. 1 tbspsaffron in lukewarm milk
  14. 1 bowlcashew nut
  15. 1 bowlpoppy seed
  16. 1 tbspkewra water
  17. 1 tbsprose water
  18. 2 tbspblack pepper powder
  19. 2 tbspsalt
  20. 2 tbspsugar
  21. 1 tbsp ghee

    Separate half of onion for beresta (crispy fritters) and make a smooth paste with other half with green chilis. Meanwhile whisk the yoghurt with black pepper powder and salt/sugar in a bowl.Marinate the mutton overnight with yoghurt and onion,green chili and ginger-garlic paste and shahi garam masala.

    Make a uniform paste with cashews/poppy seeds. Also keep a bowl of saffron with lukewarm milk and mix with kewra/rose water and keep separate.

    Take some ghee in a pan and temper the dry whole spices in it and add the onion fritters with cashew/poppy seed paste. Mix well until the oil separates from gravy. Add in the marinated mutton and keep stirring until the mutton pieces are well mixed with spices. Transfer the whole contents in slow cooker/pressure cooker with a cup of lukewarm water. As the mutton becomes tender add in shahi garam masala powder with the saffron milk.
