Sweet potatoes with egg sauce

Cook the sweet potatoes without peeling it off,salt should be added to the water after choking the potatoes with knife to ease the adsorption of salt. When it's done,remove from hot water and allow it to cool then Peel it off and cut into cubes.

Into the pan,add little amount of oil,chopped garlic and ginger and stir for a while

Add chopped or blended bell pepper and onion into the pan and stir

Add seasonings and curry powder

At this point add whisked egg unto it and close the lid with out stiring, allow it to simmer for 5seconds and then stir the whole thing together.keep on stiring until it's done.

Unto a plate place the diced sweet potatoes and the egg sauce and serve.😋
