Ahoy friends! Had to get a culinary grip on things so I took a break. In 8 months this old girl lost 83 lbs, was taken off blood pressure meds AAAAND I was taken off insulin. Go me! Here’s how I managed to keep on eating happy. These fiber bombs are very tasty and very filling and only 3 net carbs per muffin. Ingredients

20-30 mins
12 servings
  1. 2cup’s carbquick
  2. 1/3 cuperithritol (monk fruit sugar)
  3. 1 tspbaking powder
  4. Vanilla
  5. 2 tbspoil
  6. 1egg
  7. 1 cuphalf and half
  8. 1/2 cupwater if more liquid is needed
  9. 1 1/2 cupblueberries
  10. Crumb topping:
  11. 4 tbsproom temp butter
  12. 3/4 cupcarbquick
  13. 1/4 cuperithritol and a dash cinnamon

Steps

  1. 1

    Preheat oven to 350. In a bowl, mix the muffin ingredients except the water and berries. If you need the water to loosen it up, use it. Fold in berries.

    Spray a muffin tin or use paper liners. I used a 1/3 cup measure, sprayed, to dip my batter out. It made 12 muffins.

    In a small bowl, combine the crumb ingredients with a fork until crumbly. Using a tablespoon, I put a pile of crumbs on each muffin.

    Bake until Golden brown and the tops bounce back. About 20-30 minutes.

I'm an army brat with a Cajun mother and an Irish dad. I'm married to the love of my life, David, and we have 2 daughters and 2 grandchildren. I've been a barber for 40 years. Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
