Okinawan-Style Mixed Rice "Kufua Juushii"

I wanted to make an easy and standard Okinawan food!

You can change up the ingredients with anything you like. I like to add hijiki, burdock, and aburaage, switch up the shiitake with shimeji mushrooms, exchange the Chinese chives for the green onions, etc.
You can store the leftovers in the refrigerator. By the way, I like to add a lot of sesame oil and green onions. ( Recipe by Nanapi

Ingredients

5 servings
  1. 700 gramsWhite rice
  2. 150 gramsPork (this time, I used pork belly)
  3. 1/3Carrot
  4. 4Dried shiitake mushrooms
  5. 30 gramsKamaboko
  6. 1/2a bunch Green onion or scallion
  7. 2 tbsp●Mirin
  8. 2 tbsp● Usukuchi soy sauce
  9. 1/2 tsp●Salt
  10. 3 tbsp●Cooking sake
  11. 1as required Dashi stock
  12. 1to preference Sesame oil

Steps

  1. 1

    These are the ingredients. Soak the shiitake mushrooms in water, boil the pork, and cut everything into small pieces.

    Wash the rice, then add the ● seasonings and add dashi stock in place of water (you could also add the liquid from soaking the shiitake mushrooms).

    Add all the ingredients from Step 1 except the green onions and start the rice cooker.

    Once it has cooked, mix in the sesame oil and green onions. Check the taste. If it's too weak, add some salt. It's ready!

    I added Hijiki and sesame oil make a great combination!
