I got an idea from soboro rice (seasoned ground meat with rice) and tried soboro sauce over udon noodles.

Ingredients

1 serving
  1. 1serving Udon noodles
  2. 100 gramsGround pork
  3. 5 cmJapanese leek or scallion
  4. 1/2 tspGrated garlic
  5. 1/2 tspGrated ginger
  6. 1 tsp★Tianmianjiang (Chinese sweet bean paste)
  7. 1as much as you like ★ Doubanjiang
  8. 2 tsp★ Soy sauce
  9. 1 tsp★ Sake
  10. 1 tsp★ Sugar
  11. 1/2 tsp★Chinese style soup base
  12. 3 tbsp★ Water
  13. 1 tspKatakuriko slurry (a mixture of katakuriko and water)
  14. 1 tspSesame oil
  15. 1Green onion or scallion
  16. 1Poached egg

Steps

  1. 1

    In a pan, heat the sesame oil and cook the tubed garlic and ginger.

    After garlic and ginger become aromatic, add the pork and cook until brown.

    Turn off the heat and add the ★ marked ingredients.

    Turn on the heat and cook, stirring.

    Turn off the heat again and add the katakuriko dissolved in water, stirring constantly. Turn on the heat and cook until the sauce becomes slightly thick.

    Heat up the udon noodles in boiling water. Drain and serve in a plate.

    Pour the sauce over the noodles and top with sliced scallions and poached eggs, and you're done.

    Mix everything together and enjoy. It's super delicious.
