Steps

Pull off and discard the skin from the chicken.

Remove all the meat from the bones, and cut it into cubes.

Place the chicken cubes into a large mixing bowl.

Add the remaining ingredients, and toss together until thoroughly mixed.

Refrigerate for at least 2 hours, and serve chilled over lettuce leaf cups.

*You can also substitute dried cranberries or chopped Granny Smith apples in place of the dried cherries.*
