Pumpkin saag

Monsoon makes the earth lush green. In this season we get many green leafy vegetables and green saag from our kitchen garden/sabzi mandi.
This time we get various green leafy veggies like chaulai (green/red), Sajna (drumstick leaves), lotus stem, pumpkin saag, and stem. The saags are full of micronutrients , antioxidants and have medicinal values.
Today, I prepared a pumpkin saag with yellow split moong dal. It's very delicious and goes well with steamed rice.

Steps

Arrange the ingredients.

In a pressure cooker take water, dal, saag, chopped pumpkin, tomato, cook for one whistle. Allow releasing pressure automatically.

Heat oil on a pan. Add mustard seeds and allow them to crackle.

Then add chopped garlic and green chili. Saute till aromatic and golden brown.

Add the boiled pumpkin saag stuff. Adjust the seasoning and cook on high heat to evaporator water if any.
Serve delicious pumpkin saag and enjoy.
