Ingredients

  1. 3-4snake gourds (peeled and chopped)
  2. 1 cupdesiccated coconut
  3. 2 tbspginger paste
  4. 2 tbspcumin powder
  5. 2 tbspcoriander powder
  6. 3-4green chilis (slit)
  7. 1bay - leaf
  8. 2 tbspcumin seeds

    First boil the chopped snake gourd.use a strainer to drain out the remaining water.

    I have tried making this recipe in very less oil so just for tempering add cumin seeds with bay leaf and green chilis. Add in the masalas like ginger paste with cumin-coriander and add in the gourds.Stir fry well so that spices blend well. As snake gourds have a bland taste adjust per level of salt- sugar. Continue stirring in between. Add in the desiccated coconut for enhancement of flavor. Serve with white rice.
