Clean the chicken and cut it into bite-sized pieces.

Pound the chive and turmeric, then divide into two portions. Pound the garlic and shallots. Marinate the chicken with all the seasonings, half of the chive and turmeric mixture, and 20 ml (about 1 1/2 tablespoons) peanut oil. Let it marinate for 30 minutes to 1 hour.

Heat a pan and add the remaining peanut oil. Sauté the rest of the chive and turmeric mixture until fragrant, then add the eggs and chicken. Stir-fry until the chicken is cooked. Add chicken broth or water, bring to a boil, skim off any foam, then simmer for 20 minutes. This helps the meat cook through without drying out. Reheat before serving.
