Refreshing Simmered Pork, Daikon Radish, and Carrot

We've been making this recipe in our home for a long time. I added vinegar to make it a good recipe for summer.

Parboiling the daikon radish (for 5-6 minutes in the microwave) before cooking it in the pan helps it absorb the flavors. Adjust the amount of vinegar to taste. You can add green onions, if you want. Make sure to stir while it's simmering. You could also make this without the vinegar and it will still be delicious. Recipe by Yuuyuu0221

Ingredients

4 servings
  • 200 gramsThinly sliced pork belly (or pork offcuts)
  • 1/2Daikon radish
  • 1Carrot
  • 3 tbsp★ Soy sauce
  • 2 tbsp★ Sake
  • 2 tbsp★ Mirin
  • 2 tbsp★ Sugar
  • 2 tbspVinegar
  • 400 mlHot water
  • 1 tbspSesame oil

Steps

  1. 1

    Peel the daikon radish. Cut it in half vertically and then cut it into chunks. Peel the carrot and cut it into chunks. Parboil the daikon radish in the microwave.

    Cut the pork into 3 cm pieces. Pour the sesame oil to a deep frying pan and stir-fry the pork. Add the daikon radish and carrots and stir-fry. Add the hot water and the ★ ingredients.

  3. 3

    Simmer over low-medium heat for 20-30 minutes until the liquid completely boils away (and the vegetables are soft). Add the vinegar just before it is done simmering.
