Easy greek pasta salad

Ingredients

  1. 1 lbdried pasta
  2. 1 cupsliced bell pepper (1 medium)
  3. 1 cupthinly sliced zuchini (1/2 medium)
  4. 1 cuphalved cherry tomatoes - yellow, red and variety
  5. 1/3 cupthin sliced scallions (5 to 6) (spring/green onions)
  6. 1/4 cupsliced banana peppers or sliced pepperoncini (optional)
  7. 1 cuphalved mixed olives
  8. 1 cupgrated parmesan cheese
  9. 1 cupfresh mozzarella balls chopped
  10. 1/3 cupfresh parsley, basil - optional
  11. for dressing
  12. 1/4 cupred wine vinegar or white wine vinegar
  13. 1/2 teaspoonfine sea salt - add more to taste
  14. 1/2 teaspoonfresh ground black pepper
  15. 1/2 teaspoondried oregano
  16. 2-3 tablespoonsjuice from pepperoncini jar, optional
  17. 1/4 cupextra virgin olive oil

Cooking Instructions

    Cook pasta until tender - 6 to 10 mins. Drain & rinse under cold water when done

    While pasta cooks, make the dressing - whisk vinegar, salt, pepper, oregano, pepperoncini juice and olive oil until blended. Add the drained and rinsed pasta to the dressing and mix well.

    Stir in Bell pepper, zuchini, tomatoes, scallions, pepperoncini, olives, parmsan, mozarella and herbs. Taste for seasoning and adjust. Serve. Or cover and refrigerate for at least 30mins (use within 5 days). Flavour will increase while sitting.
