Heat a wok over high heat and add peanut oil. Stir fry the garlic, ginger and fresh chilli for a few seconds, then add the pork mince and stir fry for 2 - 3 minutes until the meat is browned.

Add the rice wine or sherry, season with soy sauce and chilli bean paste and mix well.

Add the hot stock and bring to the boil. Add the noodle and stir well.

Season with the sesame oil, then add the spring onion, tossing and mixing all the ingredients well.

Serve immediately.
