Ingredients

30 minutes
Serves 2 servings
  1. 2 tbsppeanut oil
  2. 2garlic cloves, peeled, crushed and finely chopped
  3. 1 tbspfreshly grated root ginger
  4. 1medium fresh chilli, de-seeded and finely chopped
  5. 250 gminced pork or chicken
  6. 1 tbspShaoxing rice wine or dry sherry
  7. 1 tbspdark soy sauce
  8. 1 tbspchilli bean paste
  9. 200 mlhot chicken stock
  10. 150 gmung bean noodles, pre- soaked in hot water for 10 minutes, then drained
  11. 1 tsptoasted sesame oil
  12. 2large spring onions, finely chopped

Steps

30 minutes
  1. 1

    Heat a wok over high heat and add peanut oil. Stir fry the garlic, ginger and fresh chilli for a few seconds, then add the pork mince and stir fry for 2 - 3 minutes until the meat is browned.

    Add the rice wine or sherry, season with soy sauce and chilli bean paste and mix well.

  3. 3

    Add the hot stock and bring to the boil. Add the noodle and stir well.

  4. 4

    Season with the sesame oil, then add the spring onion, tossing and mixing all the ingredients well.

    Serve immediately.
