Julienne the onion.

Pour the oil into the pot, heat it with the butter.

When it melts, add the chopped onion and cook over low heat for 20 minutes, stirring occasionally so that the onion is poached little by little. Add salt and pepper.

Add the flour and stir for a couple of minutes.

Add the white wine, stir and after two minutes add the water.

Stir and cook for about 30 minutes.

Cut the bread into slices, toast it.

Serve the soup in bowls, the toasted bread spread on the plates, put grated cheese on top and gratin in the oven or microwave (just grill option) for 5 minutes until it melts. You already have a magnificent and authentic french onion soup.
