Classic chocolate chip cookies. Nothing healthy here.
The dough is made the day before as it needs chilling but it’s worth the forward planning. On the upside, that means you have chocolate chip cookies ready to make first thing.

They also bake really well from frozen.
Divide the mix, flatten and then put safely in the freezer eg with baking paper between each one. Then bake from frozen.

Ingredients

Makes 14-15 cookies.
  • 125 gsalted butter - room temp
  • 75 glight brown sugar
  • 75 ggolden caster sugar
  • 1egg
  • Optional: 1/2 tsp vanilla extract
  • 240 gplain flour
  • 1/2 tspbicarb
  • 175 g85% chocolate, chopped - or a mix of dark and milk
  • Sea salt

Steps

    Beat the butter and sugars together. By hand or mixer.

  2. 2

    Add the egg and vanilla if using. Beat together.

  3. 3

    Sift in the flour and bicarb. Stir in gently so that it just makes a dough.

    Fold in the chocolate.

  5. 5

    Chill overnight 😎

  6. 6

    When ready to bake, preheat oven to 180. And line a baking tray with baking paper. I needed two trays.

    Divide the mix into golf ball size balls. And put on the lined tray (s) with lots of space to grow.

  8. 8

    Slightly flatten with your hand/ a spoon. Bake until golden - for about 15 mins.

    Sprinkle with sea salt. Leave to cool at least a little before eating! Enjoy 😋
