Ingredients

Serves 6 servings
  • 2 tablespoonsbutter (25 g)
  • 3 tablespoonsall-purpose flour (25 g)
  • 1 cupmilk (about 250 ml)
  • 3eggs
  • Salt
  • Ground nutmeg and pepper
  • 3/4 cupshredded Gruyère cheese (80 g)

20 minutes

    Make a béchamel sauce by melting the butter, stirring in the flour, then gradually whisking in the milk until smooth and thickened.

    Add the egg yolks one at a time, mixing well after each addition.

    Stir in the shredded Gruyère cheese.

  4. 4

    Beat the egg whites until stiff peaks form.

  5. 5

    Gently fold the beaten egg whites into the mixture.

  6. 6

    Butter and flour individual soufflé dishes.

  7. 7

    Fill the dishes two-thirds full with the soufflé mixture.

  8. 8

    Bake at 410°F (210°C) for 20 minutes.
