Ingredients

24 cookies
  1. 1 cupall-purpose flour
  2. 1 teaspoonbaking powder
  3. 1 teaspoonbaking soda
  4. 1 teaspooncinnamon
  5. Pinchkosher salt
  6. 113 grams (1/2 cup)unsalted butter, at room temperature
  7. 1/2 cupsugar
  8. 1/2 cuplight brown sugar
  9. 1egg
  10. 1 teaspoonvanilla extract
  11. 1 cupbittersweet chocolate chips
  12. 1 cupregular oats
  13. 1 cupsweetened coconut flakes
  14. 2/3 cupchopped pecans

Cooking Instructions

    Mix first 5 ingredients in a bowl.

    In a large electric mixer bowl beat butter until creamy, then add sugars and mix for 2 minutes.

    Beat in egg and vanilla.

  4. 4

    Stir in flour mixture until just combined.

  5. 5

    Stir in rest of ingredients.

    If possible, cover dough in film and let it rest 24 hours in the refrigerator. In my experience this way the cookies will be crunchier on the outside and softer on the inside.

    Heat oven to 350F.

    In a cookie sheet lined with parchment paper drop 2 tablespoons of dough for each cookie, spacing 2 inches apart.

    Bake for 15 minutes until edges are lightly brown, rotating sheet halfway through. Let them rest for 15’, then transfer to rack to cool.
