Spicy garlic potato wedges

Ingredients

  1. 6large baking potatoes rinsed
  2. 1/4 cupolive oil
  3. 2garlic cloves minced
  4. 1/2 teaspoononion powder
  5. 2 teaspoonssalt
  6. 1 teaspoonpaprika
  7. 1/2 teaspooncracked black pepper
  8. 1/4 cuphot sauce
  9. 2/3 cupfinely grated or shredded Parmesan cheese
  10. 2 tablespoonschopped chives

Cooking Instructions

    Heat oven to 400 degrees Fahrenheit.

    Line a large baking sheet with parchment paper.

    Slice potatoes into even wedges. You should get 6-8 even sized wedges per potato. Place wedges in large bowl or ziplock bag and set aside.

    In a small bowl, whisk together the oil, garlic, onion powder,salt, paprika, pepper and hot sauce. Pour this mixture over the potatoes and toss together until evenly coated.

    On the parchment lined tray, arrange the wedges skin side down. Sprinkle with half the Parmesan and extra salt if needed.

    Bake 30-35 minutes,turning wedges halfway through the baking time. When they are crispy, golden and soft when poked with a fork, remove from oven.

    Sprinkle with chives and remaining Parmesan cheese.

    Serve with additional hot sauce and sour cream if desired.
