Taiwanese style Three cup chicken 台式三杯鸡

Chop chicken thighs or whole legs

Boil to remove scum

Add some sesame oil into the pan

Add ginger into pan and fry till fragrant

Add in garlic and spring onion

Add in chicken and fry till fragrant

Add in rice wine, light and dark soy sauce and sugar into the pan.

Once it starts to boil, turn on small heat to reduce gravy

Finally add in basil leaves and put the lid on to cover for about 10 seconds

Add some sesame oil for fragrance. Remove and serve.
