This veggie soup tastes incredible and is super easy to make - another of my super nutritious weekly meals I make, especially when I’ve come to the end of my Stilton and can add the rind for an extra depth of flavour - I sometimes add chunks of spicy sausage for my partner.

This veggie soup tastes incredible and is super easy to make - another of my super nutritious weekly meals I make, especially when I’ve come to the end of my Stilton and can add the rind for an extra depth of flavour - I sometimes add chunks of spicy sausage for my partner.
Steps

Place veg in ovenproof dish with olive oil and sprinkle with thyme and oregano

Cook according to instructions on packet, roughly 30 - 40 mins stirring Halfway through
- 3
Transfer to a pot and add the chopped tomatoes, tinned chickpeas including the juice, 2 tbsp of chopped fresh parsley, balsamic vinegar, Stilton and cooked sausage if using. Season to taste.

Serve with a little grated fresh Parmesan if you have it - enjoy
