Ingredients

30–40 minutes
Serves 2 servings
  • 3.5 ozcooked ham (about 100 grams)
  • 3.5 ozlow-moisture mozzarella (about 100 grams)
  • Olive oil
  • Oregano
  • 7 oztomato sauce (about 200 grams)
  • 6 sliceschicken breast
  • Eggplant

Steps

30–40 minutes
  1. 1

    Prepare the ingredients: Slice the eggplant into slightly thin slices so they cook quickly.

    Also slice the low-moisture mozzarella into thin pieces. (If you don't have it, you can use any mild, semi-soft cheese.)

    Take a rectangular baking dish and lightly grease it with olive oil.

  3. 3

    Place the chicken breast slices in the baking dish.

  4. 4

    On each slice, layer:
    • a tablespoon of tomato sauce on the base
    • a slice of eggplant
    • a slice of cooked ham
    • a slice of low-moisture mozzarella
    • finally, add a teaspoon of tomato sauce on top for color.

    Bake in a convection oven at 400°F (200°C) for 20 minutes.

    Serve with a side like salad or sautéed vegetables. Enjoy!
