This is a very simple recipe that anyone can make. I came up with it one day when I didn't know what to cook, and in no time, this dish came together.

Prepare the ingredients: Slice the eggplant into slightly thin slices so they cook quickly.
Also slice the low-moisture mozzarella into thin pieces. (If you don't have it, you can use any mild, semi-soft cheese.)

Take a rectangular baking dish and lightly grease it with olive oil.

Place the chicken breast slices in the baking dish.

On each slice, layer:
• a tablespoon of tomato sauce on the base
• a slice of eggplant
• a slice of cooked ham
• a slice of low-moisture mozzarella
• finally, add a teaspoon of tomato sauce on top for color. - 5
Bake in a convection oven at 400°F (200°C) for 20 minutes.

Serve with a side like salad or sautéed vegetables. Enjoy!
