Ingredients

2 servings
  1. 40 gramsCellophane noodles
  2. 100 gramsShelled shrimp
  3. 1/2Cucumber
  4. 1/4Red onion
  5. 4Cherry tomatoes
  6. 1 1/2to 2 tablespoons A) Fish sauce
  7. 1 1/2 tbspA) Green chili pepper vinegar
  8. 1 tbspA) Lemon juice
  9. 1 tspA: Sugar
  10. 1 dashof each Salt, Katakuriko (for seasoning the shrimp)
  11. 1Cilantro

Steps

  1. 1

    Make a slit on the back of the shelled shrimp, coat in the seasonings, boil, then let cool. Cut the cucumber into half lengthwise, then thinly slice diagonally.

    Remove the stems of the cherry tomatoes, and cut into 2-4 wedges. Thinly slice the red onion, soak in water for 5 minutes, then drain.

  3. 3

    Combine the A) ingredients in a bowl. Boil the harusame in boiling water for 3 minutes, then combine with the A) ingredients. Let cool.

  4. 4

    Combine Steps 1 and 2 in the bowl, mix well, and plate. Scatter chopped cilantro on top.
