Sabudana kheer/sago payasam
A traditional recipe from Tamil Nadu. Very nutritious and tasty.
Steps

Rinse the sago well and soaked in 1/4 cup of water for at least 2 hours.

Heat the1/4 tbs ghee in a pan on low medium flame. Add cashews and raisins and until it is lightly golden. Remove the nuts and raisins and keep them aside.

Transfer the soaked sago to the same pan then add milk. Cook and stir in between until it transparent. You may add milk if required.

Add cardamom powder mix well and turn off the gas.

Meanwhile to make a jaggery syrup dissolve the jaggery in 4 tbs water. Bring it to boil. Stir well. Simmer it until it dissolves and slightly thickened.

Filter the jaggery syrup. Keep aside. Mix both jaggery syrup and sago when they are warm. Remember not to add hot syrup to payasam.

Add 1 tbsp ghee and fried nuts. Payasam is ready to Serve.
